1 tablespoon cooking fat or unsalted butter

1 bunch wild sorrel, chopped

1 bunch lemon thyme, chopped

1 chicken

Salt and pepper

10 shallot onions, peeled and halved

1. Pre-heat the oven to 200°C.

2. Mash the butter with half the chopped wild sorrel and lemon thyme and salt and pepper.

3. Loosen the chicken skin and rub some of the herb and butter mixture under it.

4. Stuff the cavity with shallots and remaining herbs.

5. Rub remaining herb and butter mixture over the outer skin.

6. Roast the chicken until golden brown and crispy-skinned.
